Ingredients:
- 100 g sourdough discard
- 250 g milk
- 200 g flour
- 70 g butter, melted
- 40 g sugar
- 8 g vanilla extract
- A sprinkle of salt
- A sprinkle of cinnamon
- 8 g baking powder
- 1 egg
- 1 banana, chopped or mashed
- 1/2 cup chocolate chips
Instructions:
1.Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, salt, cinnamon, and baking powder.
2. Mix Wet Ingredients: In another bowl, combine the sourdough discard, milk, melted butter, vanilla extract, and egg. Whisk until well mixed.
3.Combine Wet and Dry: Pour the wet ingredients into the dry ingredients. Stir until just combined; the batter will be lumpy.
4. Add Banana and Chocolate Chips: Gently fold in the chopped or mashed banana and chocolate chips.
5. Heat Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray if necessary.
6.Cook Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes, or until golden brown and cooked through.
7. Serve: Serve warm with your favorite toppings.
