Raw Chocolate Ice Cream (Nourishing & Simple)
This raw chocolate ice cream is rich, creamy, and made with nutrient-dense, real-food ingredients. It’s sweetened naturally with maple syrup and uses raw cacao for that deep chocolate flavor. This is a favorite in our home—especially on warm afternoons when we want a treat that feels indulgent but still supports our health.
You’ll need an ice cream machine for this—either a KitchenAid attachment, Cuisinart, or any countertop model.
Ingredients:
- 2 cups raw milk
- 1 cup heavy cream (preferably from grass-fed cows)
- ½ cup raw cacao powder
- ½ cup pure maple syrup
- 3 pastured egg yolks
- 1 tsp vanilla extract
- Dash of cinnamon (optional, but so good)
Instructions:
Step 1:
In a mixing bowl, whisk together the egg yolks and maple syrup until smooth and slightly thickened.
Step 2:
Add raw milk, heavy cream, cacao powder, vanilla, and cinnamon. Whisk until everything is well combined and the cacao is fully mixed in (no lumps). You can use a blender for this step if you want it extra smooth.
Step 3:
Pour the mixture into your ice cream machine and churn according to the manufacturer’s instructions (usually 20–25 minutes).
Step 4:
Once it reaches soft-serve consistency, you can enjoy it right away, or transfer it to a container and freeze for 1–2 hours for a firmer texture.
Tips:
- For extra richness, you can add a spoonful of collagen or a bit of melted coconut oil.
- Want it extra chocolatey? Add a few tablespoons more cacao powder to taste.
- This recipe doubles well if you’re serving a crowd!
