One Pan Beef Taco Bowl with Ancestral Ground Beef

Organ meats like liver and heart are some of the most nutrient-dense foods we can eat. But let’s be real, not everyone wants to cook them on their own. That’s why I love using an ancestral blend of ground beef that includes liver and heart already mixed in. It’s one of the easiest ways to get in extra iron, B vitamins, zinc, and other essential nutrients without anyone in the family even noticing.

This simple one pan taco recipe is one of our go-to meals. It comes together in under 20 minutes and is loaded with flavor, protein, and nourishment.

Ingredients:

  • 1 lb ancestral ground beef (with beef, liver, and heart)
  • 1 cup frozen or fresh corn
  • 1 cup black beans (drained and rinsed)
  • ½ cup bone broth
  • 1 packet (or 2 to 3 tablespoons) taco seasoning
  • 2 cups cooked rice (optional)

Instructions:

  1. In a large skillet, cook the ground beef over medium heat until browned.
  2. Add the taco seasoning and bone broth. Stir to combine and let simmer for 2 to 3 minutes.
  3. Stir in the corn and black beans. Cook for another 3 to 5 minutes until everything is heated through and slightly reduced.
  4. If using, stir in the cooked rice at the end and mix well. Heat for another minute or two until warmed through.

Topping Ideas:

Sliced avocado or guacamole

  • Fresh cilantro
  • Shredded cheese
  • Sour cream or Greek yogurt
  • A squeeze of lime juice
  • Crushed tortilla chips for crunch
