Fried chicken with Einkorn Flour

Ingredients:
- 3 large chicken breasts, cut into strips or a pack of chicken tenderloins
- 2/3 cup bread crumbs
- 1 cup einkorn flour
- 1 tsp salt
- 1/2 tsp pepper
- 2 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 eggs
- Splash of milk
- Coconut oil or tallow for frying

Instructions:

1. Prepare the Chicken:
- Rinse the chicken breasts and pat them dry with paper towels.
- Cut the chicken breasts into strips or use chicken tenderloins as they are.

2. Set Up Breading Stations:
- In a shallow bowl, combine the bread crumbs, einkorn flour, salt, pepper, oregano, garlic powder, and onion powder.
- In another bowl, whisk together the eggs and a splash of milk until well combined.

3. Bread the Chicken:
- Dip each chicken strip into the egg mixture, ensuring it's fully coated.
- Transfer the chicken strip to the flour mixture, pressing gently to ensure an even coating.
- Repeat with all the chicken strips.

4. Heat the Oil:
- In a large skillet or frying pan, heat a generous amount of coconut oil or tallow over medium-high heat. The oil should be about 1/2 inch deep.
- To test if the oil is hot enough, drop a small piece of breading into the oil; if it sizzles immediately, the oil is ready.

5. Fry the Chicken:
- Carefully place the breaded chicken strips into the hot oil, being careful not to overcrowd the pan.
- Fry the chicken strips for about 3-4 minutes on each side, or until they are golden brown and cooked through. The internal temperature should reach 165°F (75°C).
- Remove the chicken strips from the oil and place them on a plate lined with paper towels to drain any excess oil.

6. Serve:
- Serve the fried chicken strips hot with your favorite dipping sauces or side dishes.

Tips:
-Oil Temperature: Maintain a consistent oil temperature to ensure the chicken cooks evenly without burning the breading.
-Crispiness: For extra crispy chicken, you can double-dip by repeating the egg and flour mixture steps before frying.
-Alternative Oils: Coconut oil and tallow are great for frying, but you can also use other high-heat oils like avocado oil if preferred.

- Bread crumbs can be made from sourdough bread at home too!
